When you cook meats that release oil/juice, a cool thing you can do is add a bit of acid (wine, lemon juice, etc.) and water and then emulsify (I don’t know if this is the right word) the liquids til it turns into something more solid and coats the food. You can also add spices/garlic/fragrant things to this. 10/10 would recommend.
